Chitosan

Chitosan

Chitosan has a number of commercial and possible biomedical uses. It can be used in agriculture as a seed treatment and biopesticide, helping plants to fight off fungal infections. In winemaking it can be used as a fining agent, also helping to prevent spoilage.

Applications in the food industry

Chitosan can be used as a binder, moisturizer, clarifier, filler, emulsifier, polishing agent and thickening stabilizer in the food industry; as a functional oligosaccharide, it can lower cholesterol and improve the body’s immunity. Enhance the body’s ability to resist disease and infection, and especially has strong anti-tumor effects. Because of its rich resources and high application value, it has been widely developed and used. In industry, chitosan is extracted by enzymatic or acid hydrolysis of shrimp skin or crab shells.
1.As an immobilized enzyme carrier
The chitosan acetic acid solution is sprayed into the alkali solution for solidification. After separation and regeneration, chitosan fine particles can be used as a carrier for immobilized enzymes. The enzymes immobilized by chitosan can be used for sugar making, wine making, and vinegar making. Protein hydrolysis and other biological preparation engineering.
2. Used as food additives
As a food thickener and stabilizer, microcrystalline chitosan can be used in the production of mayonnaise, peanut butter, sesame paste, canned polenta, cream substitutes and other condiments. Usually, vinegar often produces precipitation after being left for a long time, which is mainly caused by the metals in it. It is caused by the formation of macromolecular complexes between ions and phenolic acids such as tannins. Vinegar treated with chitin and chitosan did not precipitate after being stored for one year. When producing soy sauce, adding an appropriate amount of chitosan can remove protein and prevent precipitation. Adding a small amount of chitosan to miso can appropriately reduce the amount of salt added, and the product will not deteriorate after long-term storage.
3. Used as food packaging film
Chitosan, starch and water are mixed evenly to form a film. After drying, it is treated with alkali solution to make a chitosan-starch synthetic food packaging film. This film is non-toxic, edible, oil-resistant, and insoluble in cold and heat. Water, high tensile strength, can be used to package solid, semi-solid and liquid food. The film can automatically biodegrade, so there is no white environmental pollution.
4. Used for food preservation and preservation
Chitosan can be used to preserve vegetables, meat products, seafood, starch, soy products, and eggs, milk and soy products.Due to the influence of physiological maturation after picking, fruits and vegetables will soften, resulting in a decrease in hardness, making transportation difficult, a decrease in quality and nutritional value, and a weakening of the resistance to bacteria.
Chitosan has an obvious preservation effect on chilled pork, and the higher the deacetylation degree of chitosan, the better the preservation effect on chilled meat.Chitosan is an excellent natural antibacterial antioxidant for seafood rich in unsaturated fatty acids. Chitosan of different molecular weights prepared from snow crabs, with a concentration of 50-200mg/kg, can effectively control the cooking process of cod meat. Lipids oxidize during the cooking process, and the higher the concentration, the stronger the antioxidant capacity.

Applications in daily chemicals

Chitosan is non-toxic, odorless, and has antibacterial effects. When used in cosmetics, it can improve the film-forming properties of the product and has antibacterial and moisturizing functions without causing any allergic irritation. For example, by introducing a hydroxypropyl ammonium chloride group into the chitosan molecule, the resulting chitosan hydroxypropyltrimethylammonium chloride can enhance the hydration capacity of chitosan, improve its hygroscopic and moisturizing properties, and become a rich source of , cosmetic moisturizing materials with good performance. Various hair shampoo and hair care products made with chitosan have the effects of being easy to comb, making hair fluffy, full to the touch, and shiny. It is more effective for fine hair that is prone to breakage and split ends. Hundreds of daily cosmetics containing chitosan are sold in Europe, the United States, Japan and other countries and regions.
